Allow fillet to thaw in the refrigerator overnight.
Cut fillet into 3-4 pieces and season with salt, pepper, and your favorite herbs.
Prepare skillet at med-high heat and add 2 tbsp. olive oil.
Sear fillet with skin side up for about 3 minutes then flip so skin side is down.
Cover and reduce heat to low.
Simmer covered for 3-4 more minutes.
